Ideas For A Bake-Off

I have looked in lots of forums. The school I attend is having a bake-off. It is a fundraiser for the United Way. I knew they were having the bake-off; wasn't interested in participating. Well, I decided to take muffins yesterday to my anatomy/physiology class. My instructor has imsisted that I participate in the bake-off. My husband & children agree. icon_razz.gif Now I don't know what to make. So far there seem to be no guidlines other than the catagories: Pies,cakes,cheesecakes and cookies or brownies. Any ideas are appreciated.

You could do a fancy cheesecake covered in chocolate ganache. Yummy!!! icon_biggrin.gif

Something that I won a blue ribbon for was "tuxedo brownie cups"

Basically it's brownie batter that you pour in a muffin tin, can be either mini or regular size (mini look cute!) Once baked, you make an round indentation into the brownie, to create a small reservoir. Then you pipe
white chocolate cream cheese filling into the small reservoir, add sliced strawberries on top -place them to where they are standing straight up, but "fan" them out. Then you simply drizzle white chocolate or dark chocolate on top. Voila! Oh and the taste...yummy!

They are so cute looking. Every time I make them, people ask for the recipe.

Newlyweds, that sounds so good! I would love to make that for grandaughters class christmas party. May I ask do you just add pudding mix to cream cheese or real white chocolate?Thanks for the great idea.

Dolfin, here is the recipe - it does not use pudding mix

1 (19-21 oz) box of brownie mix (PLUS ingredients to make cake like brownies)
2 oz white chocolate baking bar
2 Tbsp milk
1 8oz pkg cream cheese, softened
1/4 cup confectioner sugar
1 cup cool whip, thawed
1 pint strawberries, sliced
-optional garnish: melted white chocolate, melted dark chocolate, mint leaves, zest from orange, etc.,

Directions are for mini muffin tin
Heat oven to 325 degrees. Spray muffin tin w/ nonstick cooking spray
Prepare brownies according to package directions for cake like brownies.
Fill each muffin tin 2/3 full ( I find it easy to use a small spring hing ice cream scoop )
Bake 14 minutes, or until edges are set, be careful not to over bake.

While brownies are cooking, microwave white chocolate and milk in a microwave safe bowl -do not cover- for 1 minute on high, stir until smooth. Cool slightly. In a mixing bowl, combine cream cheese and confectioners sugar. Mix well. Gradually stir in the white chocolate mixture, until smooth. Fold in whipped topping.

Once brownies are cooked remove muffin tin from oven, immediately press down the tops of the muffins, to create reservoir, but make sure to leave an edge - I find it easy to use a soda pop bottle cap that I've washed to press down into the brownie Leave brownies in pan to cool 15 minutes

Fill pastry bag fitted w/ tip 21 (or your choice of star tip) w/ cream cheese mixture, pipe cream cheese mixture into cooled brownie cups. Arrange strawberry slices on top. Place in airtight container and refrigerate 1-3 hours or until ready to serve.

Ok just found out there are NO RULES! I was getting very excited to do this, then I remembered my school has a culinary arts program. How do I compete. I told my husband. He said" They might be in the culinary arts program,but they don't cook like you. Besides you have your cake buddies." He is soo sweet. No wonder I married him. The bake-off is on Oct. 2; I'm going to try several things.

Thanks for the brownie recipe. My family wants them this weekend.
I am trying to arrange a "taste test" with the youth at church. Leave the items I bake with a comment card. I will not be there, but have someone who will oversee this. icon_lol.gif Hopefully will find something good to take. I know this is just a fundraiser; I'm so competitive. icon_redface.gif
