I am mostly just a purely hobbiest, but I have THREE cakes for this Saturday (one is for my MIL's birthday) and one for next weekend... My kitchen will never be the same again. I don't know HOW you all do it with keeping your kitchen in a normal state. I make SUCH a mess! Buttercream is the WORST, but needing two to three mixing bowls for cake doesn't help either! I guess that's why people are willing to pay someone else to do it, huh?

I'll actually have to PLAN when and how I'm doing this instead of my usual "after kids go to bed the night before it's due" rush. I HATE letting cakes sit out. They are soooo much better when served fresh!

My kitchen is always a mess when I am decorating and baking. It gets better with time. I just decorate all the cakes, then clean the kitchen. Congrat's on all your orders.

I do mine in stages so it's not so bad, but still a train wreck!
1. one day I bake all the cakes for the order, wrap and freeze
2. while cake is baking, I make all the bc I will need, and color what I need as well
3. then I clean up and usually it's late so I go to bed!
4. the day before the cake is due, I pull it out, ice and decorate it
5. then clean that up

Works for me, and I don't feel so overwhelmed if I have more than two cakes to do. Hope that helps somebody. No way to get around all that cleaning!

Congradulations on all of your orders, I too like my cakes to be fresh, but i just recently started doing mine in stages like arosstx
and boy does it save you so much time not only do you have time to take a breathe but it seems to go so much smoother.

good luck at keeping the kitchen clean. thumbs_up.gif

It can get hectic! I also bake all the cakes on one day and freeze them. I also make French BC and freeze it. Then the day before I plan to decorate I thaw everything! It is less of a frenzy.
