I just got the castle-shaped Bundt pan. It's so cute! I made a test cake last night, and I have two questions:

1. The cake didn't rise to fill the pan. The pan sort of slopes outward to make the walls, and there are rocks and a little bit of a drawbridge at the bottom. But the cake rose straight up, well above the pan, instead of filling in those spots. Any suggestions?

2. Decorating. All of the pictures I've seen just dust it with sugar or something like that. I want to actually frost! The only idea I've had so far was tracing the stones with the smooth side of a basketweave tip to make the stonework. Any other ideas?

(I'm usually good at searches, and I'm having a tough time with this forum's search function - is it just me? Sorry if this has been discussed before!)

wuzzled,

I have this pan as well. The cake I made in it came with directions saying you should use a rubber spatula and smooth the batter so that the sides are higher than the center then bake. It seemed to help my cake, also you have to use a really heavy cake in that pan. Hope that helps/makes sense.

I have a nordicware cathedral bundt pan and believe that there are similar issues with all these shaped bundts. before sticking in the oven, you need to push some batter onto the outer circle/edge of the pan, otherwise the batter won't touch the upper part of the design when it rises. I've used both dense cake recipes and box cake recipes in this bundt, and they all rise the same way.
