I know that w/ royal icing you have to mix it, until it loses it's sheen. I am using a Kitchenaid Stand mixer...about how long, and on what level should I be mixing the icing?

I mix it until it stands in soft peaks - so when you remove the beater it makes a peak which very slowly sags over a little.

I mix on med., and if your beater has the rubber coating. You need to use a stainless steal beater. ![]()
