I know that there is a trick, but I completely forget. Can anyone help me?

Do you mean collaring your pans? or fitting the bottom of your pan?

what i do is put the pan on top of the parchment and trace the bottom of the pan. if you trace the top of the pan it will be too big.

Me, too....just trace the bottom of the pan and cut just inside the line so the paper doesn't go up the sides of the pan (not that it would hurt anything, it just might make your edges not as clean).

That sounds like what you're looking for - just putting it on top - did you know you could buy the parchment circles pre-cut too? I think at Beryl's although I haven't done it but I thought it was a great idea and not too expensive......

As for collaring your pans - there is an article on CC here that will show you how to do it.

thank you so much for the link. i have been trying to figure this out to. alton brown did it on good eats but i didnt write it down. printed this for future reference.

You can also put an exacto knife in a compass (the kind you use for drawing circles) and cut perfect circles very easily!

You might end up with a tiny hole in the center, but it won't be big enough to cause any problems.

shoot I want to print that out but it keeps printing out funny - like 34 pages! And only like a line on each page! UGH! Anyone else know how to do it better? How to get it to print nicely icon_smile.gif ?
