Another Imbc Question

hi...does imbc frosted cakes need to be stored in the refrigerator??? i'm planning on making a cake with IMBC on monday but it will be for tuesday morning...i don't think the cake will fit in my refrigerator...will the frosting melt??? thanks in advance.

If you have a cool room to store the cake, it should be fine. IMBC is behaves very much like butter does -- if left out in a warm spot, it will indeed melt.

For the same reason, you don't want to serve a cake covered with IMBC right out of the fridge -- let it come to room temp for at least an hour.
