My strawberry filling is 2cups low-sugar strawberry preserves and 1cup Solo strawberry cake & pastry filling. The preserves have lots of strawberry chunks. When strawberries are in season, I spread this filling, then add a layer of thinly sliced strawberries over the top of that.
If I read you right, you're looking for a BC flavor? I'd stick to vanilla or a half vanilla/half almond... so that it's not a sharp almond flavoring. But that would stand up well to your chocolate cake and strawberry filling.
Oh - and Solo is a brand of canned fillings, small cans. Pricey but nice. I usually buy only that for my kolacky at Christmas.
