The cake will have buttercream icing and I also need to know how long in advance can I make the cake? If I were to make it Wed. or Thurs. would it be good for Sunday? icon_confused.gif

I freeze all my cakes. That time frame should work fine. I've frozen mine up to almost a week. Just take it out 3-4 hours before you're going to eat it.

....And hello from a fellow Minnesotan!!

WAIT!!!! One thing to know, I have been having this problem lately...

When you thaw it at room temp while the weather is warm and humid, the cake is going to sweat. (This means it will become wet on the outside, like a glass of ice water, in case you weren't sure, not that I think you're stupid!) This will dry out after a few hours with no problem, but if you have colors on the cake they may run. Please consider this when freezing them all decorated. A way to get away from this problem is to thaw at a refrigerated temp. Just an FYI.

Thank you guys! This solved my problem! My husband's grandma wanted it for a gift opening in South Dakota which will be on Sunday and she's leaving on Friday so I think this will work!
