this is the situation, i have been asked to make the dessert for our base's up coming Air Force 60th birthday dinner. Originally i was going to make 550 cupcakes with edible images on top. Since i signed on to do this i got a new job (cooking). I work 40+ hours a week and i do not want to ask for time off, not to mention that someone else is already off on the two days that i was going to take. is there anything that i can make in place of the cupcakes that is not as time consuming? it is a 700.00 job and i would hate to turn it down. Any suggestiones would be greatly appreciated.

Mika, you didnt say when the birthday dinner was, but you could make sheet cakes ahead of time, then freeze them, thaw and frost. Or how about large pans of Brownies and then just sprinkle powdered sugar over them.
How about a Strawberry or Banana Triffle. Very easy and quick to put together.
I have another wonderful dessert where you layer graham crackers, vanilla pudding mixed with 1/2 cool whip, then top with canned cherry pie filling , blueberry pie filling, or use strawberries mixed with strawberry glaze. Then repeat layer's top with cool whip.Real quick to put together. (If your real crunched for time you can by those huge can's of pre-made puddings instead of making your own.) that's 10 -> 12x18 sheet cakes and 1 -> 9x13 if you go that route.
(54 > 2x2 servings / sheet = 10 sheets for 540 servings...then add the 9x13 for another 24 (14 more than you need)
could still do a edible image by printing multiple copies on one icing sheet, cutting apart and applying (tho' that's a LOT of work)
so that works out a little less than $64/sheet that you're charging (way low for cake w/ edible image)
