Mini Cake Questions

I have this tendency to make a big cake and then mini cakes to go along with them. Now people want these for parties. How do you charge for them. I realize that fondant means a definate upcharge. But I am talking about a simple Jersey for exmple. One color BC with second color accents. Probably about 3in x 3in cake pre cut. I am thinking $2.00 a piece. Any thoughts?

WAAAAAAAY too cheap!!!!!! The smaller the cake sometimes the harder to decorate! I wouldn't do them for less than $5 or $6 each.

I agree - they are more labor intesive. Charge for your work.

At the cheapest I would start out at $3.50 and based on the cake, filling, frosting style perhaps $6 at the highest.

I'm not sure if I read your post right but I think you said minis in the shape of a jersey? That is time consuming to ice, even if it is just a crumb coat to put fondant over. I would charge double whatever a round mini would be- which for me starts at $5 each. Don't know your specifics but if you want an idea of how much you should charge- Make two dozen and time yourself. Count your food cost and then add labor, then be realistic. Do you want to make 10 cents an hour, $5.00 an hour, $10.00 and hour, etc.? Be careful- it is way to easy to lose money doing these because they are so time intensive.

It sounds as if you would get 3 - 4 per 9x13 cake, so divide the cost of a fully decorated 9x13 by 3 or 4, and that would be a good starting place for prices. HTH
