I am making 400 wedding cake shaped cookies, as favors for my daughters wedding. I am also making her cake, so I need to get the cookies done several days before the wedding. They will be wrapped individually in cellophane bags, so they should stay fresh, however, does anyone have any suggestions on what kind of icing to use for the decoration? To ice them, I am using my home-made poured fondant, which does not dry out the cookie. But I am worried about the decorative icing. I have to make deep red monogram letters on every cookie. Would royal icing be the best to use for the lettering? I don't want the red color to bleed into the frosting in the days before the wedding. Thanks!!!

You may want to try royal icing but you may also want to do a test run to see if it does bleed. Good luck, you got a lot of baking ahead of you.
