I have a wedding cake this weekend that is 3 tiers to be iced in Golden Yellow. How do I insure that all the cakes are the same color? How do you know how much to color, especially when I won't be able to color all in same bowl. And, do you mix colors by hand or by Kitchenaid? Thanks!
Weigh out a portion of the buttercream. Measure (either by portion of teaspoon or by counting drops) the exact amount of color you add to the weighed out portion to achieve the color you want. Each time you color a new batch, weigh out the same amount and add the exact same amount of coloring. Make sure you go by the weight of the buttercream and NOT the volume as the amount of air incorporated can vary and will alter the volume but not the weight. HTH! ![]()
