I need to make a cake with fruit on top and I don't know what the clear gel is called or how the gel is made or can it be bought? Can anyone help me? Thanks

I think you're referring to Piping Gel.....you can buy it at Walmart, Hobby Lobby, or Michaels.

If you're refering to that clear gel that holds fruit in place on tarts, etc, it is just a little juice/nectar and water with a little cornstarch. Bring to the boil, then simmer till it starts to look clear. (Keep watching - it doen't take long!)
