Fillings That Don't Require Refrigeration

I am fairly new to the "caking" world and am looking for fillings that don't require refrigeration. Until now I have used instant pudding, which goes bad if you don't refrigerate it (don't ask me how I know...bad experience/blonde moment). I want to try a fondant cake, but from what I have read, it should not be put in the refrigerator.
Thanks for your help!
if you make your fillings with non dairy, they should be safe, anything without uncooked eggs should also be pretty safe, preserves are wonderful fillings as well
you can purchase pre-made fillings from a cake supply store or over the internet. the one's that i've used didn't need refridgeration. the only drawback is that it usually comes in a large amount. they're fairly inexpensive for the amount you get and you get alot of flavors to choose from. anything from pineapple to chocolate bavarian cream (my fav) to cream cheese.
a couple of good ones...

(made this with frozen strawberries, didn't sieve the seeds, and used straberry pucker liquer.. tasty!)

both will hold up at room temp. for a couple of days.
Also, any sort of flavored buttercream, especially with a liquer in it, will be fine for a couple of days. ( no egg recipies, but a butter/ shortening blend will be good. I used the buttecream dream recipe)
