After the cake booth this weekend I am left with a LOT of extra cake. I plan to make cake balls, but it is going to make a TON of them and I want to save some for next month (Halloween!!). Here is my plan, can anyone tell me if this is the best way to go...
Mix up the cake balls, ball them, freeze them seperated on cookie sheets, then place them in freezer bags and store in freezer until ready to use. When ready to use, thaw them, then dip in chocolate and desired toppings. I think this is the best idea, as freezing isn't good for the chocolate. Or am I way off base? Has anyone found a method that works better, or is this how you all do it? Thanks for any feedback! ![]()
I think that it sounds like a great idea!! As long as they are sealed up good after they are frozen they should be fine. ![]()
I made some cake balls last month and that's exactly how I did it. Froze them separately on a cookie sheet then when they were frozen put them all in a ziploc. Took them out about a week ago and brought them to work for a treat for everyone. Didn't have time to dip them in chocolate, darnit. But they tasted great !!! Everyone loved them.
Thanks guys, I thought that was the best way to go, but around here sometimes someone will pop up with something I never would have thought of.
Michelle, if you do a search for 'cake balls' you will find several threads that discuss them in detail, including how to make them. But the short and sweet story is that they are essentially a way of taking leftover cake, or cake scraps from trimming, and turning them into truffles.

That's funny Wendoger!! Anyway, when I make the eyes, I roll them in white chocolate, then use red piping gel to make them bloord shot. You can paint the iris with your icing colors in all different colors. They turn out really awesomely gross! That's why I want to save a bunch of these cake balls for Halloween! I don't have a big use for them right now, although, when CAN'T you use cake balls? HELLO?? ![]()
