Okey Dokey, Here is what I've come up with for items available on a daily basis at Sugarland. Am I missing any major flavor profiles? Are there redundancies?
maybe a banana tea cake ?

Sugarland Menu:

AM- Scones ( Plain, Apricot/Candied Ginger, Cherry Almond, Bacon-Scallion-Cheddar)
Streusel Muffin tops (Whole lemon, Blueberry, Peach Cobbler)
Cinnamon Rolls & Sticky Buns
Danish Cake & Chocolate Donuts (Apple Cider &Pumpkin in fall)
Croissants & Pain au Chocolat
Biscuits & Gravy

Lunch Salad of the day, Sandwich of the day, Soup of the day, Wrap of the Day, Mac & Cheese of the Day

Pastry Case Regulars-

Everything sounds so good! The only thing I see is the biscuits and gravy seem out of place. I don't know if that makes sense or not, but with the other items you are offering I would not expect to see biscuits and gravy on the menu.

You are going through the process of getting a liquor license even though you aren't serving dinner?

I am trying to come up with some savory items for those people who don't like sweet for every meal. I was kinda brainstorming..if we bake biscuits etc.etc.

We are hoping to be able to do a large after theater business and thought there a lot of people who would like dessert and a baileys and coffee etc after seeing a play.

i do agree with the biscuits and gravy comment....or maybe you could give it a cool name....like Chunky Chicken Reduction Atop Featherlight Biscuit Pillows...icon_smile.gif lol....or something much more mouthwatering and 10 times less cheesy icon_smile.gif

I could honestly eat biscuts and gravy everyday...toss in some eggs and grits and I am a happy gal.
The menu sounds super yummy, prepare to be a busy lady

That makes sense. I didn't know you were near a theater district. It will make for very long days for you, but I'm sure it will pay off!

Ok. This is my honest opinion here.. with a name like sugarland, and all your delectable desserts I would scrap the whole savory foods all together.. or I would do savory pastries. I think you can pretty much get biscuits and gravy, salads, soup and sandwiches about anywhere. A mouth watering pastry, fresh isnt as easy to find.

Also, I was watching BBC America with Chef Ramsay.. who I just love icon_smile.gif He was saying that you want to have a relatively short menu, one page.. as to not overwhelm the guest. Then you can just change it regularly, keeping your top selling items on the menu, also by offering a "get it while you can" item.. tends to drive business. Great marketing technique. Also being the business we are in, you could put a disclaimer on the menu.. which is what I plan to do.. is something along the lines of.. ** This menu is limited only to your creativity** or ** If you can dream it, I can bake it** I dont know. Something like that. Duff says something along the lines on his web page.. but its more like.. " whatever you can imagine we can create it" ( not a direct quote) That way your customer knows they arent limited to the what is on the menu that you do accept special requests.

Just my ideas, things I've heard.. n' such. Its so exciting!

I have to serve entrees of some sort in order to get a liquor license. Since liquor sales have a much higher margin of profit than muffins, I need to keep that in my product mix, which means serving some light entrees.

What about a quiche of the day as well? Not something everyone sells, very cafe-y, and (based on your menu) you'll probably have most of the ingredients around? Then, you can do the Panera bread thing a offer a "you pick two" with half portions of your lunch items.
