Dipped Strawberries Question

I am making a cake this week that will have chocolate dipped strawberries on top and around the edges. I am going to dip them in dark chocolate and then paint little swirls in white chocolate on them. My question is, can I make these in advance and put them in the fridge, or will that make the berries sweat? Should I wait until right before the party to make the strawberries(which would be really hard to do)?

Wait until the last minute that you can before you make these. They don't keep really well for any long periods of time. I have dipped mine late at night for a cake to be delivered the next day. If I have any extras after the cake I have put them in the fridge and they usually don't look that good after only a short period of time. My guess is not more than 24 hours prior to placing on the cake, but the shorter the time the better your strawberries will look.

I agree...wait as long as you possibly can. I've not had luck with dipped strawberries beyond the first day I've made them.

All strawberries that I have ever done had to be done the VERY last thing. They will sweat after being in the fridge and they will get mushy if you leave them out!!

I agree...wait. They'll be prettier and the berries will still be fresh.
