Why Does This Happen?

My cupcakes all tend to sink in in the middle. Why? Is my oven too hot? It doesn't appear to be happening until maybe a little more than 1/2 way through baking. icon_sad.gif

they all sink a bit b/c the edges cook faster and rise, but once they're FINISHEd cooking the middle should rise up...that's inducation that they're done...

what temp are u baking at?

The center's never come back up. icon_sad.gif I bake them at 350 (what my recipe says to do).

You mention they are falling about half way through. Are you opening the oven too soon? Don't open it until you think they are almost done. Also, I bake my cupcakes at 375.

I usually open once about half way through just to take a peak and see how they're doing. Not a good thing? If I bake them at 375 and I'm not peaking, how do I know if they're over done? Or not done enough?

I have a glass window in my oven and a light inside. I just look in the window and bake till the minimum time is expired before opening the oven door. I have not had trouble this way.

I made scratch cupcakes the other day and the recipe called to preheat the oven to 375 and lower to 350 right when you put them into the oven. They baked perfectly. Hope this helps.
