Crazy For Some Help

a woman at church has asked if i would do her cousins wedding cake. i told her to get me the info and i would consider it. she emailed me a pic of the cake she wants. no problem with that. the problem is that she wants a butter cake that is covered in fondant and has no filling whatsoever. she wants the same height of this cake. the cake is for 150 people. to me, i can't see how i could get the height without the filling. and also it seems like it could end up being very dry. can anyone tell me if this is even possible.

Maybe you should ask her what her idea of filling is and why exactly she doesn't want it. Maybe you can find something she won't dislike. Explain to her that you need the filling as the "glue" to hold the layers together. Also it'll add some height.

I bet she means that she just wants icing between layers and not something specifically used for filling.

Do you really have to have a "filling" be it buttercream or a jam/pudding type?

I agree with belindajax, she probably just wants buttercream or whatever icing you're using, instead of filling.

i have had people ask for just plain cake with no buttercream or jam filling so i have always made a madiera cake which is always moist, i have never had any complaints only compliments on how moist the cake is considering there is no filling, so have a look for some good madiera recipies and see how you go, i only use fondant so have no worries with this.. hth

you could brush your cake with simple syrup that will keep your cake moist and glue your layers together or use buttercream between layers. I don't think that is considered filling since you use it as icing.
