I have a new customer who has requested that the pillow cake I'm making to accompany the castle cake she ordered ( pillow cake is being throw in for free by the way....) be covered in chocolate ganache under the fondant. I have only made one pillow cake before and I'm really not sure that will work.

maybe it will....?

Anyone??

Not sure why it wouldn't, but it will show through a light colored fondant. Why for free? That's expensive to do. Good choc is expensive!
If it is free, she shouldn't have much input there, IMHO.

I told her I'd throw in a pillow cake with a tiara with her order if she chose the larger castle cake for her daughter's sweet 16. Which she did. And now she is asking that the pillow cake be chocolate with ganache and strawberry filling and covered in ganache under the fondant.

And that really does sound a bit demanding to me so I think I'll just tell her the ganache wont work for a small sculpted cake under fondant.

I had a ton of problems with my other pillow ( rookie mistakes) and I dont want to cause myself more heartache than I need).

And I forgot about the color showing through, so thank you for reminding me!

If I offer a free cake the only thing they get to decide is flavor, and they only get to choose from one of my basic flavors.

If she is getting this picky then she gets to pay for it, expecially with the ganache, fondant, AND filling? Those three things in themselves are an additional $1.50/serving on top of my base charge for a serving.

leily you're right.

I told her ganache was out. Thinking back, I probably shouldnt have thrown in 2 things that are as fancy as I did but since its too late to take it back, this is the least I shoud do.

why do I have a feeling that this 16 year old daughter of hers really thinks she is a real princess?? lol...
