I for some reason hate making bc.

can I say make 4-5 batches of it. and freeze it? (it would be he 1/2 butter, 1/2 shortening version).

Lets say I would be using it up within about 2 months.

is that okay/safe?

Yep...you can freeze it, not sure about 2 months because I've only done it for about a month, but I'm sure it would be fine. Just let come to room temp when you take it out and rewhip it.

For two months you don't even need to freeze it; refrigeration is fine...

Yes..when I store BC, I use a tupperware...lay a sheet of saran wrap on the bc so that there is no air, and then I put the lid on...pop it in the freezer....it lasts for several months.

I have to say, I'm not real fond of making BC, either, and the idea of freezing it is wonderful. I know it can be in the fridge for quite a while without any problem. But, if I divide it up into "cake size" portions and freeze it, I can make more at a time and be ready to go in 30 mins or so, that is thaw time and rewhipping. COOL! Gotta love this site and all the wonderful people. Thank you!

I would also keep it covered while thawing out. thumbs_up.gif

oh, good point, yes, the BC should be covered at all times.

When I was younger my mom used to make icing all the time and freeze it, especially during the holidays...she did a ton of baking and decorating. Sometimes, no not sometimes, ALL THE TIME my sister and I would go to the freezer in the basement and steel big spoonfuls of icing! (No wonder we were pudgy as children!!!)

So, yes, like the others have said you should be good to go in freezing it.

I hate making BC too. That's so good to know that you can freeze the stuff. I just might have a BC makin' day coming up soon icon_wink.gif
