Ganache Cake W/ Strawberries

How do I get the chocolate ganache to drizzle down the sides of the cake and look neat? Do I let it cool a good bit before drizzling and do I use a piping bag for it?

Also, for this same cake I need to put chocolate dipped strawberries on it. If I dip these late tonight and put on the cake, will they be okay for tomorrow? Or do I need to wait until the morning to do this? I know they will sweat some.

Any advice is appreciated!! Thanks!

I did one with ganache and choc covered strawberries (in my photos).....I let the ganache drizzle down the sides, then as it was setting up a little, smoothes it with a hot spatula. You can do the strawberries ahead, but wait until you absolutely have to........they will weep a little.

I wouldn't do the berries til tomorrow as late as possible. I made some last week for home, and we didn't finish them that evening. They were a mess by morning.

i would do the choc strawberries last....as much of a P.I.T.A. as it will probably be to wait, you don't want them to weep at all....
as for the ganache, you should be able to put it on the cake, then kinda smooth it out and it should go off the sides a bit and drizzle down on its own.
