I just got an order from a golf course owner. I want to impress them because I think it will do me good to get involved with them. They are having a party to celebrate 6 generations of family for about 80 people. THere idea is to have 6 tiers and to write each generations name on the tiers. All they want is white buttercream, very simple. How do I even begin that?? I mean can I make like the top tier 3X4 the next 4X4 then next 5X4...i hope that makes sense. I have just never seen pan sizes that small but if I start with a 6in as the top layer, this cake will feed WAY to many!! How would others go about this? thanks for any ideas!!!

I think if you make it to small it would look funny - I might make a couple of the layer dummies that way the cake wont look odd.

tiers smaller than 6x6 can be cut from larger tiers.

example:

an 8x8 can be cut into

2 - 4x4
2 - 3x3
2 - 2x2

pieces

giving 3 tiers of 4x4, 3x3 and 2x2 for the work of baking one layer.

a 10x10 would yield 2 each of 5x5 and 4x4

then just ice using the big icing tip so less problems w/ crumbs.

and every tier doesnt' HAVE to be smaller.

Or you could do a pyramid of sorts - three layers next to each other with a slight space in between, supporting two centered above them, support ing one centered above those. (sorry, I don't draw the visuals as well as doug does).

give the system a little time to catch up (it's just like the galleries w/ their 30 min lag time -- tho' here the lag time is more on the order of 3-4 minutes)

If you did the pyramid look , you could make each tier a single layer, instead of double, that would give you more tiers and a more gradual increase in size. I think a pyramid would look great.
