Would someone refresh my memory...I know I saw it on here somewhere. How to make Chocolate MMF. also can I mix it in my kitchenaid with the paddle attachment?

I believe you just add cocoa powder. Just make it in you KA like normal. Be careful not to use dark cocoa because it will turn the MMF black!

I just add cocoa powder to mine. I add as little or much as I want depending on the flavor. I use my KA but make sure that you grease the paddle and the bowl.

I just made MMF for the first time yesterday, and I made chocolate because my daughter LOVES chocolate. I made it in my KA starting with the whisk & then finishing with the dough hook. I did grease evertyhing very well because I was so afraid it would stick.

Dark cocoa turns it black? I used regular Hershey's cocoa powder & also a bit of melted chocolate chips. I was hoping for a darker color than what I got, mine is a very light brown/tan. I was thinking that if I ever did it again I'd use a dark Ghiardelli's (sp?) chocolate for a more chocolate color. Guess I'll have to try it & see icon_biggrin.gif

I have always added 1 oz unsweetened chocolate (solid) to the marshmallows when I melt them, and then 1 tbsp cocoa powder in with the powdered sugar. I've been very happy with the color and taste!

I didn't even think to add unsweetened chocolate. I have a big bar of it in the pantry too icon_redface.gif I will definitely try that next time and maybe the MMF won't be as intensely sweet as it was this time. I have never made it before; is the regular version super-duper sweet too? My cake also had chocolate ganache in the filling, and I think that combined with the sweet MMF made it too much. Oh well. I'll just have to make the regular MMF to compare.

What about the Hershey's Dutch processed chocolate cocoa powder? That will make it dark. I tried it with buttercream and holy cow, it got really dark once it set out a while. Next time I will use the regular chocolate like what you used. LOL.
