Why Does My Cake Sink In The Middle,help

icon_sad.gif What am I doing wrong, this does not happen every time. I am working on a wedding cake. Baked a 10"by 3" pan used a nail in the center and the entire cake was raised up perfectly level, when I wnet back to check it, the entire center of the cake had sunk in the middle icon_cry.gif I baked on 325. If anyone hqas any suggestions please let me know Quick. Thanks, Sharon

Check over on www.baking.911 for answers too, but there are several reasons I think...overmixing, too low a temp, underbaking, opening the oven door too much to peek (I do that). I don't usually bake at 325, so I'm no help there. sorry...

The only thing I know of that causes that is underbaking. Did you test the center, or trust that the nail was working? Even though it looks done, doesn't mean it is. Make sure you still check the center before pulling it out of the oven.

it is probably to late for you to get this but I will tell you I had the same exact problem with my 10x3" Then I posted on CC with the same question. Someone asked if I was measuring my batter. Come to find out I was over filling my pan. I measure all of the time now and I don't have that problem any more.
