Not sure where this should go. Looked in the recipe section but nothing for this as it is not a cake. This is a great brunch recipe. Looks difficult but it's pretty easy.

Ham n' Cheese Omelet Roll
4 oz. cream cheese--softened
3/4 cup milk
2 Tblsp. all-purpose flour
1/4 tsp. salt
12 eggs
2 Tblsp. Dijon mustard
2 1/4 cups shredded cheddar or swiss cheese
2 cups diced ham (fully cooked--I use Hormel you can find it in the lunchmeat section)
1/2 cup sliced green onion tops.
Line the bottom and sides of a greased 15"X10"X1" pan (jellyroll pan) with parchment paper; grease the paper and set aside. In a small mixing bowl, beat cream cheese and milk until smooth. Add flour and salt: mix until combined. In a large mixing bowl, beat eggs until blended. Add cream cheese mixture; mix well. Pour into prepared pan. Bake at 375 degrees for approx. 30 minutes or until eggs are puffed and set. Remove from oven. Immediately spread with mustard and sprinkle with 1 cup of cheese. Sprinkle with diced ham, green onions and 1 cup of cheese. Roll up from a short side, peeling parchment paper while rolling. Sprinkle top of roll with remaining cheese; bake 3-4 minutes longer until cheese is melted. YIELDS: 12 servings.
I have even cut this recipe in half for me and my husband, just used a 9X13 pan. We make this the night before Thanksgiving and on Christmas Eve for the breakfast the next morning when things are hectic. Once it has cooled, wrap in foil and then saran wrap and put in refrigerator. Next morning it can be sliced and heated in microwave or just remove saran wrap and heat in oven.
