Ot: Melting Chocolate

I was wondering if anyone could recommend a good/great tasting melting chocolate? I've tried Merkens & Wilton and I'm not thrilled with either. Thanks!

I am not super experianced, but i always use Bakers Chocolate.

I also have used ghirardelli and trader joe's store chocolate with good results.

both require a little more care in melting b/c they are real chocolate and not chips or explicit baking chocolate.

Just be aware that Merkens and Wilton are not real chocolate. They are candy coating and have a lot more oil in them than real chocolate.

I buy Peter's or Callebaut at my local cake decorating store. The Peter's is about $4/lb and the Callebaut is $8. They're both wonderful, but because they're real chocolate, they must be tempered in order to act properly. I think the extra care is a small price to pay for the better result.
