I am making a cake for one of my friends' wedding. They are not making any decisions. The only thing I have to go on is that one of the layers should be red velvet with cream cheese frosting and the rest should be vanilla cake with some kind of frosting, but she doesn't like buttercream.

The cake is four tiered, white, with scroll work and a few fondant decorations. Anyone have any ideas as to what would be good for the remaining 3 cakes and frostings?

Not sure on the frosting maybe have to go with cream cheese on the whole cake. As far as other cake flavors I would throw in a white & chocolate seem to be most universal. Maybe strawberry as the 4th?

How do you get a cake smooth enough to adhere the fondant accents to if you don't use bc? I would think a cream cheese icing would not give you the same look as in the picture.

Fewer flavor choices are better than lots of choices if they don't care anyway. Don't make things hard on yourself if they aren't requesting it.

I used the crusting cream cheese recipe on here for the beehive cake in my avatar <------ and I was able to get it VERY smooth using the oh so fabulous Melvira method. HTH

I agree.. don't give them a million choices.. if they want one layer red velvet and the rest white.. that's what I'd give them. As for the icings.. cream cheese frosting is finicky. i like to use it as a filling and ice with buttercream. What type of BC does she not like? I hate BC made with powdered sugar but like SMBC flavored with lots of real vanilla. It's heavenly and easy to work with too.. sooooo smooth. If you want a recipe let me know.. I use less butter than most recipes call for. I also LOVE to add sweetened pureed raspberries or strawberries to it for a filling.. OMG to die for!!! Or chocolate.. mmmmm. Maybe make her some and let her try it?

I think you will have to start making up her mind for her you know? Give her some options.. but make them limited and get her to nail it down with you. Good Luck!!!!

Here is a quote from another thread of what the Melvira Method is. All directions are also in the "Articles" section here on CC.

Lol Melvira is a member here. her smoothing method is called the Melvira Method. You can buy quite cheaply at a hardware/paint store mini high density foam rollers. There are different sizes.

Anyway, after your bc has crusted, you lightly roll the foam roller over your cake and it smooths out the icing like magic. I use them on my Frozen Buttercream transfers. I just pipe my design, make sure it's completely filled in, freeze it, flip it onto the cake, wait for it to defrost and crust, and then I roll the worms right out like magic.

She could make lots of money off the number of people who have been saved from a less than smooth cake.
