Need Help Asap!

I need to frost and fondant a bunch of 2 1/2" w by 4" h circular cakes. Because they are so small and wobly, I am having a VERY hard time getting my frosting on smooth and in turn the fondant is laying down very lumpy. This is for a bridal shower tomorrow after noon and I have 26 of these cakes to get done tonight. Any tricks, tips, etc. you have is *greatly* appreciated!!!

My best suggestion with any cake under 8" is to make sure it is well chilled before adding frosting/fondant. I highly suggest sticking them in the fridge for a couple of hours to firm up. This should help to keep them from moving so much.

Don't know if you have tried this or not already, but hopefully it helps.

The other thing that you can do is, once they are chilled, rather than using BC icing for the fondant to stick, you can use a complimentary jam and spread that on the cakes for the fondant to stick. Just be sure to warm up the jam a bit and put it through a fine mesh sieve so that you do not have all of the fruit chunks on your spread to prevent from having other lumps on your cakes. Good luck. Dunno if it would work, but I would tape either a cake dummy, chunk of styrofoam or several thicknesses of cardboard to the turntable. Then stick a dowel or bamboo skewer into it so the dowel is shorter than the cakes, then impale the cake on it and ice away. Seems like a dowel would work better than a skewer because of the thickness.

Thanks everyone! I have decided to scrap the idea. I don't want to be up until 6 in the morning working on these. I am hosting the shower, so I don't want to be an exhausted hostess. I've decided to cut my sheet cake into a square and place a small round cake on top of it. Waaaaay less work!! I'll keep these sugestions in mind for the next time I attempt it. icon_biggrin.gif
