Cake Stenciling...

I love my future SIL, if I didn't, I wouldn't even embark on this adventure...but...here goes...I've already made the bass fish out of fondant that will top his three-tiered light chocolate buttercream iced cake...and I'm going to stencil a hunting scene on the bottom 12" cake (sides), with two dogs, the hunter and the ducks....flying in V formation...bottom part of the V on the bottom tier, top part of the V of the ducks on the second tier, the top tier will be cypress trees & knees and water...(all 'stenciled' in dark chocolate on light chocolate)....if you can imagine, here's a cake I've done that is similar, only it is on the flat part of the cake (an Earlene design)...my question is this...I really want to try stenciling with dark chocolate ganache...I thought I would make it thicker by not adding as much cream...has anyone ever stenciled the sides of a cake with ganache? I'm going to make a practice cake tomorrow just to see if it can be done, but I was hoping for some advice if anyone has ever done this!
