I was planning on trying a doctored mix (DH yellow cake with vanilla instant pudding mix, 1 extra egg and milk instead of water). However I was going to make cupcakes instead of a cake. Is it recommended to doctor the mix if you are going with cupcakes (small surface area, versus the larger cake)?

I make cupcakes with doctored batter, especially when I have some left over from making a cake and they taste great. You might want to check the cake mix doctor website for some recipes, .

I use doctored mixes all the time with cupcakes. icon_smile.gif Plus the people that made the Cake Mix Doctor book just came out with a Cupcake version of it.

Batters are interchangeable... it doesn't matter if you make cakes of cupcakes. Sometimes making cupcakes is a great tasting tool for us.

I made the doctored mix with cake mix, butter, melted white chocolate chips, milk and all of the cupcakes ran out all over the place so I avoid making the ones that are really fluffy--with the butter in cupcake form to avoid it from happening again. The mix with the pudding added works though.

...lol....but still...YAY!
While making yellow cupcakes, I decided to try a different flavor of my Davinci coffee syrup and those turned out a little gooey....but they still tasted good!

i used 3 eggs, skim milk instead of water, oil and a package of vanilla instant pudding for my cupcakes last night, and they turned out well. Got a nice taste of vanilla in them. icon_biggrin.gif
