my mom asked if I could make some chocolate mouse for my brothers wedding in 2 days. I don't have and idea on how to make them individual other than making a small choc. cup out of a mold, which I don't have. Is there another way to do this? I thought metal cupcake holders would work, but I can't find any? Any ideas would be appreciated! Even if it's for something different. (she has a 6 ft. table that needs to get filled up, my mom tries to do everything over the top icon_rolleyes.gif )

What about the mousse piped into waffle cone bowls- they are not that big- and garnish with sliced strawberries? I am not sure what type of facility this reception would be in so I can not tell if this would be formal enough.

Maybe you could top a simple cookie with mousse? Those would be pretty tiny though.

Maybe in gold or silver foil cupcake liners? They are stronger and might hold their shape.

Shape cookies (or pastry dough, so easy to do, many recipes online) into small cups and bake. You could use cupcake/muffin tins (cut rounds and mush them into the molds) for this. Fill with mousse.

I've seen very nice mousse presentations in wine glass, and it looks very elegant, maybe the place have some extra wine glasses you could use and a very nice touch would be a rasberry with a mint leave on the top.
I think it is pretty easy an elegant. I just did some chocolate mousse using nutella and everyone loved it.

Also!! I have another idea! icon_lol.gif I don't know how easy would be to do small chocolate cups (simple ones) and filled them with the mousse!! That would be very cool and you can even use white chocolate for the cups!

I am in Ohio and my grocery store sells (in the candy section) the boxes of small chocolate cups that you fill with liquor or mousse. what about those. also, Sara Lee, in the cookie isle sells a packet of cookies called Anigetti (I may be spelling it wrong). They look like cream puffs but crunchy. You can slice those in half rather quickly and then fill with mousse. Top with powdered sugar or cocoa and refrigerate. I would make them at least a day ahead as they will keep and not get soggy. Pat

i don't know how many you need, but you could use ramekins. target had some pretty silver ones on clearance, $3 for a set of four.

in the back of the wilton yearbook they tell how to make the candy shells using melted chocolate...it says to add 1-2 T of melted choc into the bottom of a standard baking cup. brush the candy up the sides about 1/2 way to top, forming an even edge. refridgerate 5-8 minutes and repeat until you get the desired thickness. fridge until firm, carefully peel off baking cup.

I would love to see you make your own chocolate shells as well but they are time consuming because they have to be thick enough that they won't break when you peel the paper off. I am not sure how many you have to make and I would chill your mousse and pipe with a pastry bag for a nicer look.

i guess you can also jsut do the the chocolate right into the muffin tin and freeze, turn over onto a clean cloth...might be nice???

I have also seen this on tv, i think food network. it looks great.

thanks for all the help, I'm a little stressed right now. So far 148 people are coming to the wedding. I'd like to make my own choc. cups but I don't think that's an option right now. I'll head to the store later today and get some supplies to try some other ideas posted here. Did I mention I'm also in the wedding? I'm crazy for doing this. any more ideas that would work toss my way.

Google Chocolate Mousse Cupcakes. I had one last weekend from Gateau Bakery in Denver. IT WAS TO DIE FOR! I'm in search of a similar recipe and found some this way. They were prepared in the silver cupcake liners and then the liner was peeled away for serving.

Try making a chocolate banned and then piping the mousse into it. They are quicker and less time consuming then a chocolate cup but still would look nice. Just use stripes of acetate. Good Luck!

148 servings is the problem. With more time you could make balloon chocolate cups. Blow up small balloons, dip the bottoms in melted chocolate coating. Place the balloons on a sheet to dry, the drip off makes the stand for them to sit on. When solid, prick the balloon.

oh wow does that choc. mousse look good. Poov that sounds great I have to make some of them if I get time. with how many servings I have to make I would love to just make the cups but can't for time reasons. so I'll have to do one of the other ideas mentioned.
