How long in advance do you dip your strawberries and how do you store them after they are finished? This would help so much!

I would dip them just a few hours before you need them, and you can put them in the fridge for a little while. However, there will be some condensation, so be sure and take them out in time to allow time to dry.

At work, I have dipped strawberries at about 5/6:00 for the next mornings weddings. I would let them setup on the counter and then put them in the boxes and store in the fridge. I have also done them early in the morning for a wedding that night.

For afternoon weddings, I dip them last thing at night. For early evening weddings, I dip them the morning of.

I never let them site overnight. They get soggy on the bottom. I use chocolate almond bark for mine and love it. Dip them, let the bark dry, then box them. I NEVER NEVER NEVER put them in the fridge - always leaves condensation and leaves them wet.

Good luck!
