I have a cake order for the last weekend in July for a 3 tiered (6,8,10 round), buttercream with fondant accents for a pool party! It is suppose to be a barbie theme. My question is how long will this cake survive in the 95-100 degree heat here in AR? Should I try to persuade them another direction or tell them I can't do a cake for outside in this kind of heat? Are there certain recipes that will keep it from melting? Any help would be great! I don't want to risk my reputation on a cake that has melted into an unrecognizable blob on the concrete of a pool pavillion! TIA, you guys are my life line!!

Try the High Humidy BC recipe.... it's very close to the one I use and I've never had icing meltdown.

Could they keep it in the house until it is time to sing? I can't see them leaving out all the food in that high temp! The thank you gift to everyone would be food poisioning!

don't use butter! Use all crisco and don't have the cake in direct sunlight.

The party is at a public pool so there isn't anywhere to store the cake until singing time. The party is from 2-5. I just can't imagine the cake standing up that long in that heat! Will fondant melt?

Dont' know about fondant, but my BC sat outside from 2-7 in over 90 degree heat in August with no problem.

Should be ok.

But think about it......Kids + cake.........I don't think it will be standing there for long!! LOL

Also, a lot of public pools have concession stands. You might ask the manager/owner/concession person, if they would mind keeping the cake in there where it's cool, until time to present it.

In the high humidity buttercream recipe it calls for dream whip and milk, can i substitute water for the milk and what is dream whip?

It's like a powdered cool whip.. You add milk and vanilla to make it into a whipped cream.
