I'm making a cake this weekend for a baby shower and I was thinking about making a simple filling using strawberry jam and buttercream. Does that work? Do I have to crumb coat the inside so that the jam doesn't seep into the cake or will it be okay if I mix it with the buttercream?

And does anyone have any yummy cake additions using a vanilla cake mix?

Thanks so much...This is my first real cake for an actual event so any help is appreciated!

I use jam mixed with buttercream to fill many of my cakes. I just mix the jam into stiff buttercream until it's the right consistency and flavor. If you start with medium or thin buttercream, the filling may be too thin - you can always adjust the consistency with more powdered sugar or water after the flavor is what you want.

I don't use a crumb coat, and the liquid from the filling usually soaks into the cake a little, but not too much, and I think it gives more flavor that way anyway.

Make sure to pipe a buttercream dam around the edge of your cake before you put the filling on it, so the filling won't leak through the icing on the side of the cake!

I've used seedless raspberry, seedless blackberry, strawberry, apricot, and peach so far, and they've all been delicious! I have a couple more flavors just waiting for an opportunity (black cherry, blueberry, etc).

hth!
