Marzipan Problems....help

Hello,
I can't find a ready made marzipan in Istanbul and I try to make my own.
But the problem is my marzipan is yellowish-brownish color so when I try to color it the result is not good and it doesn't also have the elasticity to be able to make figurines. I also have problems with covering my cakes due to same problem.

Can someone help me what to do please? Is there a good recipe for homemade marzipan???

There are two recipes for Marshmallow Creme Marzipan in this thread:

The second one makes a more pale marzipan as it uses twice the amount of marshmallow creme.

Thank you Jan but unfortunately we don't have marshmallow creme in Istanbul , so I need a recipe without it. Maybe substitution idea for marshmallow creme??? Is there any??

First I thought there should be marshmallow in order to make creme since we also don't have marshmallow in Istanbul, but obviously it's not...
