I have pretty much cemented my pricing list down ~ $2.00/serving for buttercream, $2.50 for fondant, $.25 extra for fillings, etc. But how do you price flowers? Do you do them per flower or as a base price figure?
I have a wedding cake that originally the MOB wanted RI roses around all tiers ~ about 70-80 roses. We changed the design, and now we just have rose/calla lilly/baby's breath sprigs in 7 different places around the cake. I have gone from a load of RI flowers to quite a few less gumpaste flowers. How do you price this out?
Any thoughts or ideas would be appreciated! TIA!

well, first let me say that my base price is much higher then yours.
But i include alot in my base price. Excessive flowers or gumpaste flowers are extra, and are based on how much and how long its going to take me to do them. A full blown gumpaste rose cost $5 that includes some leaves. A calla lilly will run about $3 (only because fresh is so expensive) and a sprig of babies breath i would charge $2, so each bouquet would be $10 x 7 = $70 added on. For the boat load of RI roses, i would charge between $25 and $40 extra they are pretty fast and cheap to make it would depend on how much of a PIA the customer is being, and if i really wanted to be bothered to make them.
For fondant ribbon on a BC cake i don't charge extra.
I dont' charge extra for flowers, but I don't do gumpaste or fondant .... everything is in BC. I never know how many BC roses I'm going to use on a cake until it's done, so it would be impossible for me to tell a bride how much the cake will cost up front. I also hate the practice of nickel and diming a bride for every little thing.
Any silk or real flowers are to be purchased by the bride. If I ever get a request for gumpaste flowers, I will work up a price for those based on what my purchase price is.
