I have some leftover fondant. Can I freeze it and if so, for how long?

I have never heard of freezing it before. I just put some Crisco on the outside of my ball of fondant, then I wrap it twice in Saran/Cling Wrap and put it in a Ziplock bag with the air squeezed out. If it does get a little hard, just microwave it for 5- 10 seconds. If it is hard and crisp like, chunk and make more. I have kept MMF for at least 3 months. I also taste it before I use it to make sure it is okay.

You don't need to freeze fondant. What you can do is wrap it in saran wrap a couple of times and then put it in a ziploc bag. The fondant can stay in there for a looong time! LOL If it's hard when you take it out you just put it in the microwave for a few secs.

Regular fondant can go bad because of some of the ingredients in it, although it will last a long time at room temperature.

I freeze my fondant all the time with no problems. I also put shortening on the fondant before wrapping.

I have not used MMF, so I don't know anything about that. However, microwaving regular fondant can really be problem. It can be done, in small pieces, and on a very low setting. If heated too fast, the sugar will crystallize and the center will become like lava (I learned this the hard way).
