An update on my 'Chocolate Kahlua Cake Truffles' -- my husband took them to work and passed them out at a company-wide meeting. The entire company thinks they need to be one of my regular menu items and that I should offer them instead of groom's cakes. The owner of the company suggested making them and sending out little boxed samples to wedding planners in the area.

I never, ever thought you could do this with cake scraps and leftover icing.

just made cake balls for the 1st time. OMG OMG how wonderful. I used devils food dark chocolate cake, thru in approx 2 tbsp powdered sugar, 2 tbs of white bc frosting and used International Delights Hersheys chocolate carmel creamer, then dipped in dark choc candy melts. The questions I have are how big I made mine approx size of large walnut and also since there is liquid creamer in them do they need to be kept refigerated. Also, can they frozen once dipped in the choc. I definatly will be making these again. thumbs_up.gif

I did put mine in the freezer but when I took them out they sweat and I did not lke that. Of course I did not use the creamer in mine.

You can see my cake balls in my pics...they are in the red wagon...
