Hello all, I am sure this was posted somewhere before but i am not sure how to search for it, so, I use doctored cake mixes and i need to figure out how to get it to rise higher, any tricks I dont know about? Thanks!!!

Do you want the cake layers to be thicker, or do you want the cake to be fluffier? Do the doctored cakes rise less than the original cake mix? How are you doctoring the mixes?

I'm not sure how to help - but here are a couple of suggestions.

For thicker layers you can simply use more batter in each pan.

For lighter, fluffier layers you might try whipping the eggs whites until peaks form, then fold them in the batter after all the other ingredients are mixed. You may find that a 1/2 teaspoon baking powder (mix it in with the dry mix) will do the trick.

Add 1-2 TBSP meringue powder to your mix to make it rise more!!

I want the layers to be thicker. I just use milk, and pudding mix in my mixes. The merinqe powder sounds good!

I do doctor mine plus add the meringue powder! It really does work! icon_biggrin.gif
