what flavor of filllings go well with this cake? I want to have the option of something other than cream cheese or mary kay...

What about a white chocolate filling? Since red velvet is a chocolate cake, this would be complementary.

try this one whipped fillings this is good on red red velvet cake

1 1/4 cups milk
5 tablespoon flour

pour milk into a saucepan. gradually whisk in the flour. cook over medium to high heat, stirring constantly until thickened. pour mixture through strainer to be sure there are no lumps. cool.

1/2 cup butter
1/2 cup high ratio shortening or vegetable shortening
1 cup granulated sugar
1/2 teaspoon vanilla

whip the butter, shortening and sugar together. then whip in cooled flour/milk mixture. add vanilla and beat on high until fluffy ( 7-10 minutes).
yields 4 cups

cheesecake filling would be yummy. i use a small box of cheesecake pudding, 1 box of cream cheese, and a pint of cream. mix the cream cheese first then add the other two ingrediants and whip until thick

I agree with evieg. That icing is delicious on red velvet cake. I like to use all butter and leave out the shortening sometimes too.

I sometimes use a buttercream mixed with finely chopped toasted pecans....tastes MMMMMMMM! icon_smile.gif

I work in a cake shop and the fillings that customers ask for most often with Red velvet (other than cream cheese) are bavarian cream (chocolate and vanilla) and raspberry. I have seen it with other berries, but only once or twice. Hope this helps.
