A customer wansts a butter cake with PIÑA COLADA FILLING (Coconut + pineaple).
Anyone know of one ????

I would make a coconut custard with Coco Lopez and add strained crushed pineapple.
WOW I would love to make coconut custard with that Coco Lopez. I love that stuff. Does anyone know how you would make it?
My husband made me a coconut birthday cake this year, and for the frosting and filling he added Coco Lopez to buttercream. That would be good w/ crushed pineapple in it.

When I make mine, I make a standard batch of pastry cream, a little on the stiff side. Then I melt 2-3 gelatin sheets ( depending on application) in 2/3 c. coco lopez. Refrigerate overnight. If it is too thick in the AM, then pop it in the food processor for a minute to restore creamy texture.
Jell-O came out with a new Jell-O flavor.. Pina Colada 
I haven't tried it yet but they came out with some wild flavors around 4th of July Reading the boxes.... these are the new flavors:
(hopefully they are still available in your area but I haven't checked my area for them since 4th of July stuff was taken down)

Like I said I haven't tried the PC yet but I'm sure it's good and could maybe be used in what you're looking for... maybe lol
