Witon Buttercream - Do I Have To Use It?

I started the Wilton Course 1 class and hate the overly sweet taste of the Wilton Buttercream recipe. I've found other buttercream recipes here, but is it necessary to use their recipe for their class or can I just make sure that I use a crusting buttercream?

For class purposes I would stick with the yucky wilton recipe because it really does help get the basics of consistency down and helps with learning the basic decorations and flowers. Once you are comfortable with all that then it's very easy to experiment with using other buttercreams to decorate with! icon_smile.gif

I am going into my third class, and I only used the Wilton buttercream for my first class of course I, after that I switched to a better buttercream. I did it because I wanted to learn how to do everything in MY favorite buttercream, and since I can make mine stiff, medium and thin, my instructor said it was fine (and even used mine to show me a technique and said she couldnt tell the difference)....I think you should just do whatever you are most comfortable with.

Guess every situation is different. My Wilton instructor insisted that we use the class buttercream only! icon_sad.gif

I had some ladies in my class that insisted on bringing their "own" icing ~ they could never get the techniques right because their icing was never the proper consistency. It was very frustrating for our instructor, they weren't happy that they couldn't "get it" - but that is why.

I recommend that you use the wilton buttercream for the first course, get to know what the consistencies are ~ then experiment.

As a WMI I always suggest my students use the Wilton Class Buttercream in class, for several reasons.

If you really don't like it, you can always ice your cake in a different buttercream and just use the Wilton recipe for the decorating while in class.

If the icing is just to sweet for you add some popcorn salt to the icing while making it. It decreases the sweetness. Another trick is to add about 1/4 tsp of orange extract too to cut down on the sweetness....
