Hi Sunflower:
I make a peach cake that turns out delicious, here is the recipe
3 sticks of butter (113grs. each)
3 eggs
1 can of condensed milk (eagle or any store brand)
3 cups of all purpose flour
2 tsp. of baking powder
1 cup of sugar
1 -15 oz. can of peaches (regular syrup)
Preheat oven to 350 degrees F.
Drain the peaches and reserve the liquid, it should measure about 1 cup of syrup if not add some water to measure 1 cup. Beat the butter and eggs together, add one egg at a time, then add the sugar. Sift the flour and baking powder together. **start and end with dry ingredients** Add the flour to the butter mixture alternating with the condensed milk, and the syrup from the peaches, until all the flour is integrated.
Cut up the peaches into small bits and add to the cake dough until completely mixed.
Grease and flour a 12" cake pan (I personally use the petal cake mold for this cake). Bake for 50 min. or until toothpick comes out clean.
Hope you will enjoy!!!
I use this recipe to make the Pineapple Upside down cake, except I use pineapple juice instead of the peach syrup.
