Using Purple To Get White Buttercream?

I've been reading about people using purple gel added to their buttercream to get it whiter. I use a 50/50 butter/shortening recipe so my buttercream is not entirely white.

My question is how much purple do you use...? a dash.... icon_rolleyes.gif

I would love give this a go, but really don't want to end up with a whole batch of lilac icing... icon_wink.gif

I read that on here once and I tried it with violet. It does work, but all I can say is....put the TINIEST dab of violet in. Too much and you will have lilac icing like you said. You can always add more. Just use a toothpick, it only takes a little bit. I cannot stress this enough!! My spartan cake in my photos is the cake that I used this on. I also use butter/crisco so my icing is off white. In this case I really wanted it to be white white.

When I want really white icing I go with all Crisco and adding butter flavoring. Haven't had any complaints so far. I have also been told to try a tiny bit of blue but I have never done this.

I have done it twice, first time it came out white white (just a dab of violet) second time I forgot I didnt do a double batch of icing and put in same amount of violet and had light purple icing....the good news I was just doing a practice cake so I just colored it something else that I thought would be nice....(I turned it pink cause I thought it would look nice with ganache poured over it...It was just going to be white with ganache)...

Teeny, weeny, tiny bit of violet!

I was so glad to learn about this because I am not a fan of all crisco icing and the artifical butter flavor is a bit weird for me.

I am happy with this trick especially with my whipped cream icing, when I am adding some vanilla pudding in it then it always makes little yellowish so adding tinybit violet it turns out white for sure.

I had heard of using the teeny teeny bit of blue, but not violet (my fav color) sot I will try that. Thanks for the info.... thumbs_up.gif

It has to do with the color wheel. Purple is across from yellow so if you add the purple they cancel each other out and you get white. icon_smile.gif

So, if I read dodibug's message I would say that if you add too much purple/violet by mistake then you could try adding a tiny bit of yellow to get back to white icon_confused.gif ????

I love this stuff, adding this a few drops or squirts at a time gets awesome white, even with all that fake yellow color they put in butter! Fairly cheap and you should be able to grab it where ever you're buying all your other cake stuff.

I know, I mean, it absolutely baffles me because logic tells us that we can add color but we can't take it away. o.0

That's how it was explained to me! Something about when you use colors that are opposite from each other on the wheel they cancel each other out.

I had read where someone added too much violet, then tried to add a bit of yellow to cancel out the purple....didnt work apparently! I would just take it real easy on the violet instead.
