Is there a crusting BC recipe that doesn't use confectioners sugar? I hate using that stuff because it makes the frosting wayyyyyyy too sweet. None of my recipes use it.

I don't know of one off hand, but have you tried the buttercream dream recipe from this site? It is really good and not as sweet as others. You could even use some salt to cut the sweetness if needed.

I haven't tried the BC Dream but I did look at the ingredients and it contains confectioner's sugar. I've even added salt to frostings that contain confectioner's sugar and I don't like it. Since I have started using recipes that do not contain the confectioner's sugar, my customers simply rave about how great my cakes are and how they aren't too sweet like most cakes they have eaten.
Thank you for your input.

Can anyone help me with this? Is it the confectioner's sugar that makes it crust over?

Yep, the powdered sugar is a component of crusting!

I use the Crusting Buttercream II recipe from this site for my faux fondant and there's a little flour in that recipe. It's a yummy icing, and I believe it's the flour that makes it crust as it does. I use Morton's popcorn salt to help cut the sweetness of my icing.

Lazy_Susan, I'd like to know what kind of icing you're using that doesn't use pow/confectioners sugar.

For my BC frosting I use the Meringue BCs. For my Cream Cheese frosting I add cream cheese to my Meringue type BC frosting. And for my chocolate cakes I use Bittersweet Chocolate frosting. Oh! and for my Poppy Seed layer cake I use White Chocolate Cream frosting. None of these use confectioner's sugar and taste great! My not so sweet frostings is truly what keeps my customers coming back so often. icon_smile.gif
