Hi, I've had a pricing enquiry for a heart shaped cake and the customer wants to know how many servings she can expect to get from this cake (main dessert). I have absolutely no idea because I haven't done a heart shaped wedding cake before. Your help will be greatly appreciated!

3 tier - 4" high, torted in 2" layers.

How many servings would I get from a
6" heart
8" heart
10" heart

Also, can someone please tell me the difference between modelling chocolate and chocolate fondant?

Thanks in advance......

The Wilton book says that this for servings

6"- 8 Party 14- Wedding
8"-18 Party 22 Wedding
10" 24 P 38 WEdding

The party servings are 1.5"x 2" x 4 "
The wedding servings are 1" x 2" x 4"

I am working on 2 10" heart cakes now. My first time with the heart pans. I don't have the answer to your question about the chocolate. Hope this helps. Good Luck.

You want to use the party servings for dessert. Chocolate fondant is fondant with either melted chocolate or cocoa added to it and behaves and feels like normal fondant. Modelling chocolate is made from chocolate and corn syrup and is kind of plastic-y to the touch. Hope that helps!
