Any tips you want to share about Wilton Course III - any thing you can tell me is helpful - I already bought the kit, and looked through it, and I have the class syllabus...I just am anxious!
I'm guessing they will ONCE again show how to make the BC icing -which IMO it's a little bit of an overkill...especially if you've taken course I, and II -don't they have a pre-requisite that requires you to take I, and II before moving to III anyways?

They won't show you BC again. They just put that in the review of the book. Your first class, you will learn some new borders as well as ruffles, strings ect. Second class you will make the present cake. Third class you will use royal again to make the flowers on the front, you will also make the fondant rose. Last class you will put together your final cake. It is a fun class. Have fun with it.
