Thawing Cakes, How Long?

I've made 4 cakes las week and I put them in the freezer I need the cake by sunday, I'll be making a shoebox and purse cake, how long do I need to defrost the cakes and can I re-freeze them again so I can be able to carve it?? thank you.

I don't thaw and then refreeze - gives the cake the ability to pick up bacteria.

What I do is freeze...then carve...then let thaw to fill and frost...

I have found it much easier to fill after carving - especially if I am using runny filling because when you carve you might cut through your dam...

For sure don't REFREEZE. As far as thawing, I would do how it the way lcottington explained above. But, after you carve I'd COVER cake back up while thawing.

I agree. Carve while frozen and then allow the cake to defrost. As far as defrosting goes, it depends on the size of the cake, but what I usually do is set the cake out on the counter the night before I need it and it is thawed by the morning.
