I just bought Colette's book, Cakes To Dream On or something like that and it mentions Marzifon, 50/50 , Marzipan and Fondant..
She said she discourages clients from asking 100 % Marzipan as icing and instead she recomends Marzifon... I will try it one of these days.
Maripan taste great, no doubt about it.. at the present time I use
100% MMF on all my cakes. ![]()
